Friday’s Fave Five



Susanne hosts the opportunity for us to share 5 of our favorite things from the past week.

1. Finding a new recipe.  I’ve been trying to make healthier eating choices lately, and part of that has been a desire to add more fish to our menu.  I found a good recipe for Lemon Garlic Tilapia … DH declared it to be a winner.  I mentioned it yesterday, and some of you asked for the recipe so here it is:
Ingredients
  • 4 tilapia fillets
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon butter, melted
  • 1 clove garlic, finely chopped
  • 1 teaspoon dried parsley flakes
  • pepper to taste
Directions
  1. Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
  2. Rinse tilapia fillets under cool water, and pat dry with paper towels.
  3. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
  4. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

2. Homegrown corn on the cob.  Nothing says summer to me like fresh, homegrown corn on the cob.  And the local sweet corn is in.  Yummy!

3. Being able to open the windows.  Ok, it was only a couple of days, but oh it felt so wonderful to feel the fresh air.  We’re back to summer for the weekend … temperatures into the upper 90’s and heat indices of 105 or more.

4. A day spent with DD and the Ts.  We didn’t do anything special, but those days are just as much a blessing to me. 

5. Being able to get a little more quilting done.  Hand quilting is a slow process, and factor in plenty of busyness with everyday life, it’s even slower.  So it’s always a blessing when I can find a few hours to sit and quilt.

  1. I hopped over from Friday's Fave Five. I have always wanted to learn to quilt. I even took a class once but it was machine quilting not hand quilting.

  2. Thanks for sharing the fish recipe. I am also trying to incorporate more fish into my diet. And since you already found a winner of a recipe, it saves me the work (and temptation ) of going onto the Internet.

    My sliding glass door is open right now. It is the first thing I do when I get up in the morning. I love the fresh air and sound of the birds pouring in and filling up my living/dining room. Glad you are getting more summer like weather now.

  8. I have never tried tilapia, but I want to. Love when a new recipe turns out great.

    Homegrown corn on the cob sounds so good.

    Nice weather, visit with loved ones, and creativity -- can't beat that!

  9. thanks for the recipe for the talipia! I love simple recipes like this (even though hubby does all the cooking, LOL). Eating healthy is always a good thing!!

    Corn on the cob is always sooo good! A good thing to think about with the upcoming holiday!!

    It is soooo neat you are close in proximity and relationship with your grands! I know you get such joy around them!

  10. Hi there, What a wonderful list. The only way we serve Tilapia is as fish tacos-which we had this week. I'm thankful for all of our grands, the high places, and getting the baby quilt in the mail.

  11. Mmmmm--corn on the cob! We just bought some at the farmers market and can't wait to eat it, maybe this evening!
    Any day spent in the fiber arts is a good day; I'm glad you had an opportunity to quilt a little.

    I smiled, I agree wholeheartedly.. Fresh, local, corn on the cob = summer, for certain! And thank you for sharing your recipe! It seems easy, and sounds delicious.

    I'm glad you enjoyed some time with your daughter and managed to fit in some quilting, too!

  13. Thanks for sharing that recipe. I've been trying to add more fish too and we do like Tilapia.

    Our corn comes out in August and we've had a very wet spring so it might even be a little late. But you're making my mouth water for it! :v)

  14. Your fish recipe sounds pretty easy and very tasty. I never see home grown corn anywhere here. I miss that about Illinois. I've never tried quilting, you must be so proud of your work.
